Peel cucumber and cut into 2.5 cm (1”) slices. Soak in cold
water. Drain and saute in 15gms of butter with the lid on. Pound well with
spinach. Pass through a hair sieve. Reheat along with the sauce. Add cream and
seasoning.
Serve with boiled or
poached fish and white entrees.
