Cucumber sauce (Sauce aux concombres) (150ml) (5 portions)



Ingredients

Cucumber
55gms
Spinach (cooked) (30gms raw )
1 tbsp
Seasoning

Butter
30gms
White sauce
150ml
Cream
75ml


Peel cucumber and cut into 2.5 cm (1”) slices. Soak in cold water. Drain and saute in 15gms of butter with the lid on. Pound well with spinach. Pass through a hair sieve. Reheat along with the sauce. Add cream and seasoning.

Serve with boiled or poached fish and white entrees.
