Peel and quarter potatoes. Wash cauliflower and break in flowerets with the leaves. Peel carrots and cut into 1” pieces. Shell peas. Peel and slice onions and ginger. Slit green chillies. Grate coconut and prepare three extractions, thick, medium and thin. Extract lime juice. Heat the oil. Saute onions, green chillies and ginger and cook till onions is tender. Add turmeric and potatoes. Saute for a few minutes. Add third extraction of coconut milk. cook gently  till potatoes are ¾th done. Add carrots, cauliflower, peas and salt. Simmer till vegetables are cooked. Add chopped tomatoes and second extraction of coconut milk. Simmer. Add lime juice and test for seasoning. Add first extraction of coconut milk. remove from fire and mix gently.
