Tomato Ambal

Tomatoes

Mustard oil

Jaggery

Turmeric
½ tsp

Salt
to taste 
80 – 100gms
Mustard seeds
¼ tsp
30gms


Wash and cut tomatoes into quarters. Heat the oil, add mustard seeds. When mustard seeds crackle add tomatoes. Fry for a minute or two. Add jaggery, turmeric and salt. Cover and cook gently till tomatoes are cooked and gravy thickens.

N. B.      For tomato – brinjals ambal, use equal quantity quantities of brinjals and tomatoes. Cut brinjals into quarters lengthwise and fry well before adding tomatoes.
