Methi Panir















Ingredients

For 4
Cottage cheese (panir)
225gms  (prepared from 2.5 ltr milk)
Onions
30gms
Fenugreek leaves
115gms
Chilli powder
 2 tsp
Garam masala
1 ½ tsp
Turmeric
½ tsp
Coriander seeds
2 tsp
Lime juice
1 tsp – 1 ½ tsp or to taste
Salt
150ml
Water
150ml
Fat
100gms


Chop fenugreek leaves after removing root and part of steam attached to root. Wash and apply 2 tsp salt and keep aside for an hour. Squeeze out water from the leaves and wash them thoroughly (3 – 4 washings). Grind fenugreek leaves. Heat the fat (50gms) and fry onions. Add ground fenugreek leaves, and spices (expect garam masala) and fry. Fry cubes of panir in remaining fat. Add fried panir and water to fenugreek. Cover. Cook till gravy is thick. Add garam masala and lime juice and remove from the fire.
