Wash, peel and dice the gourd. Chop ginger, slit green chillies and slice onions. Cook all ingredients with just enough water to cook the vegetable. Remove from fire, add beaten curds and salt. Heat the oil. Add mustard seeds, curry leaves, sliced onions and whole red chillies. When seeds crackle, pour over gourd and curds mixture.mix well.
