Roast brinjals in hot ash or on
hot tava or griddle. Remove skin and mash. Slice a small portion of the onions;
chop remaining onions fine. Chop green chillies and garlic. Heat fat and fry
sliced onions. Add mashed brinjals, turmeric, cumin powder, chilli powder, salt
and garlic. Cook for a few minutes. Remove from fire, and chopped onions, green
chillies and coriander leaves. Mix well.
