Roast mustard seeds and cumin and
powder. Cut brinjals lengthwise and slit green chillies. Heat the fat; fry
fenugreek seeds and broken red chilli. Add brinjals and fry well. Mix sour
curds with half a cup of water, sugar, salt and green chillies and add to the
brinjal mixture. Cover and cook till brinjals are tender and gravy is thick.
Add powdered spices, mix well and remove from fire.
