Peel and cut potatoes into thin pieces 3.75 cm. (1 ½ “) long. Wash thoroughly. Drain and add salt and tamarind pulp. Heat the oil. Add slightly crushed garlic and when golden brown add broken red chillies. Stir well. Then add the potatoes and keep on a slow fire. Sprinkle water and let potatoes cook well. Remove when dry.
