Cucumber Salad With Freshly Grated Coconut




Ingredients

Cucumber (peeled), seeded and diced

Tomatoes – seeded and dices

Carrots- peeled and grated
2
Serrano chillies (seeds optional) – finely chopped 
1
Freshly grated coconut
2/3 cup
Finely chopped lightly toasted peanuts
½ cup
Sugar
½ tsp to 1
Freshly squeezed lemon juice
1 tbsp to 2
Salt and freshly ground black pepper
to taste 
Cilantro leaves
for garnish 


When ready to serve salad, combine all of the ingredients in a bowl. Spoon onto individual plates, garnish with the cilantro leaves and serve. This tastes great with a dollop of strained yogurt.
