Cucumber Cool Down















Ingredients

Quantity
Plain low-fat yoghurt
2 cups
Finely chopped cucumber – peeled if desired
1 cup
Chopped fresh mint or parsley
2 tbsp
             Or

Dried mint or parsley
1 tbsp


In a small mixing bowl, combine all of the ingredients. Cover and chill until ready to serve.

NOTE:   This is a comforting companion to almost any highly spiced dish. Spoon it over the top or serve it on the side.
