Cucumber and Tomato Raita

















Ingredients

Quantity
Plain non fat yogurt
1 cup
Fresh mint leaves – finely chopped
1 tbsp
Ground cumin
½ tsp
Chilli powder
¼ tsp
Salt
¼ tsp
Pepper
1/8 tsp
Cucumber – peeled and seeded and coarsely chopped
1 medium
Tomato – chopped
1 small
Onion – chopped finely chopped
1 tbsp


In a small bowl, combine yogurt, mint leaves, and spices. Mix well. Add remaining ingredients. Mix until well blended. Chill 1 hour before serving. (Raita will keep for several days in the refrigerator, but is best when made just 1 hour ahead.) Stir before serving.
