Garam masala

Grind ginger and garlic into a paste using a small food processor.
Heat oil in large skillet, over medium heat, add onions, and saute‚
until translucent, about 5 minutes. Add ginger-garlic paste, turmeric,
coriander, cumin, and salt; cook, stirring, 1 to 2 minutes.
Add tomatoes, chilli powder, okra, and green peppers. If mixture
appears dry, add 1/4 cup water. Add garam masala, and cook, covered, 15 to 20
minutes.
