Wash and scrub marrow but do not peel. Cut in half
lengthwise. Scoop out seeds and pith. Boil potato. Dice. Mix together chopped
nuts, diced potato, milk, seasoning, egg and chopped parsley. Melt butter. Fry
chopped onion and the seeds of marrow if tender, in half the butter. Add
chopped nuts etc., and marmite and fry for a couple of minutes longer. Parboil
vegetable marrow (it should still be hard). Fill with fried mixture. Place in a
buttered pie dish. Top with butter and grated cheese. Bake for about half an
hour in a medium oven at 175oC (350oF). Serve with tomato
sauce.
