Boil the milk in a thick-bottomed pan. Add washed rice. Stir
to a boil. Simmer gently, stirring
frequently until the rice is cooked. Mix in the sugar, flavouring and butter
(one egg yolk per 590ml of milk may also be added). Pour into a pie dish. Put
under the grill and brown slightly. Serve hot.
