Potato basket

Mixed vegetables filling:



Peas (unshelled)

Salt and pepper to taste




Peel and cut potatoes into very thin, long strips. Put into salted water and leave for 10 minutes. Drain and spread on a clean cloth. Arrange the strips in a small sieve (with handle) so as to form a design like a basket. Put a few more strips so as to bind the strips together. Place another sieve over and press tightly. Hold the handles together and immerse in hot oil and fry till light brown. Drain and fill with a macedoine of prepared vegetables. Put a handle of either lettuce stem or spring onion. Serve on a salad bed.
