Boil pork and liver separately. Cut into cubes. Mince the onion, chop ginger and garlic, grind red chillies, peppercorns, cumin and turmeric to a fine paste. Heat the oil, fry onion. Add fresh spices and fry. Add ground spices. Fry well. Add pork and liver. Put in vinegar, tamarind juice, salt, sugar and garam masala and cook till meat is tender, adding a little water if necessary. Set aside for a couple of days before serving.
