Fat for frying



Sieve flour with salt. Rub in fat. Dissolve sugar in water. Add to flour with curds and more water if necessary to make a stiff dough. Roll out to 0.5 cm ( 1/8 “) thickness. Cut into long strips and then cut into diamonds. Fry in deep fat on slow fire till light brown. Sprinkle with crushed cardamoms
