Shell hard boiled eggs. Roll in seasoned flour. Boil and
mash potatoes. Clean, boil and mince the mutton. Mix minced onions, mashed
potatoes and mutton with the seasoning. Coat egg with the minced meat mixture.
Brush with beaten egg. Roll in breadcrumbs. Deep fry in hot fat. Cut into
halves and serve cold, set in lettuce leaves or hot with tomato sauce.
N. B. Sausage meat can be used instead of mutton
in which case the potatoes are not necessary.
