Puffy omelette















Ingredients

Milk
1 tbsp
Salt
to taste 
Pepper
a pinch
Fat
10gms


Separate egg white and yolk. Beat yolk slightly. Add milk and seasoning. Beat until thick and lemon coloured. Fold in stiffly beaten egg white. Heat omelette pan. Wipe with a clean cloth. Add the fat. When fat melts add egg mixture. Spread evenly and cook slowly 2 to 5 minutes until delicately brown underneath and top is dry and firm. Loosen with a spatula. Fold and serve immediately on a hot plate.
