|
Wash colocasia leaves. Grind garlic, ginger and green
chilli. Sieve gram flour. Make a pulp with tamarind and jaggery. Make a thick
batter with gram flour and tamarind pulp. Season. Add spices and soda
bicarbonate. Spread batter evenly on the wrong side of a leaf. Put another leaf
on top and spread more batter. Fold from both sides. Roll rightly. Tie with a
thread and steam for one hour. Leave till quite cold. Slice. Fry each slice and
temper with mustard seeds. Serve hot, garnished with grated coconut and chopped
coriander leaves.
