Masala trotters (Paya)

Trotters (cleaned)

Rice flour (to wash trotters)
2 to 3 tbsp


Wash trotters using rice flour to rub in. boil washed trotters in a cooker for 20 to 25 minutes with 5 cups of water. Grind red chillies, coconut, ginger, garlic cinnamon, coriander-cumin powder, cloves, cardamoms, turmeric powder, chilli powder and coriander leaves to be fine paste. Fry sliced onions in fat and remove. In the same fat, fry spices to a golden brown colour. Add fried onions, spices and salt to trotters and simmer till the gravy is thick. Serve with onion cuchumber and chapaties.
