Ingredients

Quantity
Rice flour (prepared)
1 cup
Hot water
¾ cup
Salt
a pinch

Filling:

Sweet or savoury as desired. For sweet filling, use grated coconut and jaggery. For savoury, use a mixture of vegetables or minced meat.

Method:

Mix together the rice flour, water and salt and knead well into a smooth dough. Divide into about 12 balls and divide filling into the same number of portions. Fill centre of dough with filling by forming a depression with the thumb. Smooth over to cover. Steam in a steam pan and serve hot.

To prepare the rice flour:

 Take raw and parboiled rice in the proportion of 1:3. Soak raw rice for about 2 to 3 hours and parboiled rice for about 20 minutes. Drain. Dry slightly and pound. Sieve through a fine sieve. Heat a thick-bottomed pan. Put in flour and roast foe a few minutes till dry. Sieve again and powder any hard lumbs. Tin and use as required.
