Grate the coconut and grind to a fine paste. With 2 cups of
water extract milk. Mix flour and sugar in a bowl. Add beaten yolks and coconut
milk and make into a thin batter (as for pancake). Add flavouring. Melt ½ cup
of fat in a thick-bottomed pan or pie dish and place it in an oven. When hot,
pour about 1 – 1 ½ cup of the
batter. Close the oven and cook for about 20-30 minutes or until brown on top.
Put a spoon of fat on top and pour another layer of batter. Bake for a further
20 – 30 minutes. Repeat layer by layer till the batter is used up. When done,
remove from fire, turn over and sprinkle icing sugar over.
