Hard boiled eggs

Hard boiled in cold water (water level at least 2.5 cm (1”) above eggs). Do not cover. Bring to boil. Reduce heat and allow to simmer for 7 to 10 minutes depending on size of eggs. Crack shell lightly and plunge eggs into cold water (this is to prevent the formation of the blue rim rounds the yolk). Cool and shell.

N. B.      Duck’s eggs must be boiled for about 15 minutes.
