Boil fish. Remove skin and bones and flakes. Boil and mash
potatoes. Add the milk and half the butter. Slice tomatoes and mince onions. Grease
a pie dish, put in a layer of fish, then a layer of sliced tomatoes. Sprinkle with
onions, pepper and salt. Continue till dish is three-fourths full. Pour melted
butter over. Pile mashed potatoes on top of fish. Roughen the surface with a
fork and brush over with beaten egg. Bake in a moderate oven for 30-40 minutes.
Serve hot.
N. B. Grate
cheese can be to the added to the potatoes or chopped hard-boiled egg to fish.
A medium white sauce can be mixed with the fish.
