Cream of spinach soup

Spinach
250gms
5.65kg
Refined flour
30gms
455gms
Butter
30gms
455gms
Milk
300ml
7.5 litre
Salt
to taste  
80 – 100gms


Clean and wash spinach. Cook in stock with salt. Rub through sieve when cooked. Prepare white sauce using flour, milk and butter. Add spinach puree. Reheat and serve.
