Cheese bouchees














Ingredients

For 4
Cheese
225gms
Refined flour
115gms
Eggs
4
Salt and pepper
to taste 
Oil for frying



Sieve flour, salt and pepper. Add finely grated cheese. Beat yolks of eggs and add to dry ingredients. Mix well. Let the mixture stand for at least ½ hour. Heat the oil. While oil is being heated beat egg whites stiff and fold into the mixture lightly but thoroughly. Put teaspoonfuls of the mixture into the hot oil. Remove as it turns to a light golden-brown colour. Drain on absorbent paper and serve hot in a hot dish over a folded napkin.

N. B.      Do not allow bouchees to fry too long or else they become tough.
