Achappam (rose koekje)















Ingredients

Coconut oil to fry (absorption)

Wash and soak rice for 2 to 3 hours. Drain well (till nearly dry) and powder. Pass through a fine sieve. Extract coconut milk from grated coconut. Mix together rice flour, beaten egg, sugar, salt and coconut milk to prepare a medium batter and straight away into hot fat. As koekjes form they will separate from mould. When golden brown drain on absorption paper, cool and put into airtight tins.
