Alu Bhaji (spicy Fried Potatoes)

Potatoes
500gms
Oil
3 tbsp
Black mustard seeds
1 tsp
Ground turmeric
½ tsp
Onion – finely sliced
1 large
Green chillies, deseeded and sliced
 1 to 2
Salt
1 ½ tsp
Hot water
 ¼ cup
Lemon juice
1 tbsp


Boil potatoes in their skins until just tender. Peel and dice. Heat the oil in a sauce pan and fry the mustard seeds until they pop. Add the turmeric, sliced onions and chillies and fry until onions are soft and golden. Add the salt and water, bring to a boil, add potatoes, cover and cook until liquid is absorbed. Remove from heat. Sprinkle with lemon juice and stir well.

Serve "HOT".Can be served with boiled rice or 'chapati'.
