Vegetable Pulao














Ø  3 cup rice (300 gm)
Ø  Cauliflower, sliced and washed
Ø  100 gms fresh beans, sliced
Ø  100 gms shelled green peas
Ø  3 red carrots, scrapped and sliced
Ø  1 cup fresh curd
Ø  3 medium sized chopped onions
Ø  ¼ cup raisins, well-soaked in water
Ø  6 tblsp ghee
Ø  4 bay leaves
Ø  1 tsp cumin seeds well roasted
Ø  8 cloves
Ø  2 small cardamoms
Ø  2 inch long cinnamon stick
Ø  1 tsp pepper corns
Ø  1 piece sliced ginger
Ø  Salt to taste

Heat ghee and put in onion, cumin seeds, cloves, cardamoms, cinnamon, pepper corns and ginger, and fry them all till they are light brown. Now put in vegetables and fry for 2 to 3 minutes. Add well beaten curd. Cook and simmer till the gravy is thick. Now put in gently the washed rice, fry and add 5 cups of hot water, soaked raisins, cover and cook on medium flame till rice is half done. Put this rice into an oven and cook till rice is done. Alternatively you can put the entire lot of raw and sliced vegetable along with the water soaked have already been added. Allow two to three whistles and your pualo is ready. Serve it hot.
