Sweet Saffron Rice















Ø  2 cup rice
Ø  2 cups sugar
Ø  ½ cup ghee
Ø  2 tblsp soaked saffron in water
Ø  ½ tblsp almonds (sliced) about 25 gms
Ø  25 gms pistachio sliced
Ø  2 small cardamoms (whole)
Ø  20 pieces raisins
Ø  Khoya (mawa) or condensed milk (unsweetened)
Ø  6 cups water
Ø  Cloves and cardamoms

Clean and soak rice in equal quantity of water for about an hour or until all the water is absorbed by the rice. Heat one tblsp of ghee and add cardamom and cloves (optional) to it.
Add rice with four cups of water and saffron. Boil until grains of rice are almost tender. Mix sugar in it for ten minutes. Remove all the rice in a flat tray. Heat the remaining ghee and add one cardamom to this hot fat. Add the rice, raisins and khoya to the hot ghee. Bake all this on moderate heat in an over for fifteen minutes. Remove it from flame and garnish the dish with sliced pistachios. Serve hot as dessert.
