Rambutan Cocktail













Ø  565 gms canned rambuttan fruit, drained
Ø  400 gms honey-dew melon balls
Ø  400 gms rock melon balls
Ø  1 tblsp orange liqueur
Ø  1 egg white
Ø  ¼ cup castor sugar (50 g) mixed with a few drops green food colouring
Ø  Chilled sparkling white wine

Combine fruits and liqueur. Place egg white and sugar on two separate plates. Invert six dessert glasses and dip rim into egg white, then in to coloured sugar. Fill glasses with assorted fruit and liqueur. Cover with sparkling wine. Serve chilled.


Note: Rambutan is a bright red fruit, oval in shape, which comes from Malaysia. It is available fresh or canned at supermarkets. If you need to substitute, you can use lychees or mangosteen. Serve 4 to 6
