Ø 4 eggs
Ø 2 tblsp cream
Ø 8 green chillies minced
Ø 1” long piece of ginger, minced
Ø 1 tomato, chopped
Ø 1 small bunch of chopped coriander leaves
Ø Ghee for frying
Ø Salt to taste
Heat a little ghee and fry chopped onion, ginger, tomatoes and coriander leaves till light brown. Now take it off the flame and allow it to cool down.
Now break the eggs and whip well till they turn frothy and their volume is doubled. Now stir into it salt and cream.
Heat ghee in a pan and pour eggs into it. Spread the frothy substance evenly and sprinkle over it above prepared mixture. Now cook it on low flame till the bottom turns light brown. Turn it over and fry till light brown the other side also. Fold the omelette, take it off the flame and serve with tomato sauce or any other sauce of your choice.
