Black Carrot Pickle















Ø  1 kg carrots
Ø  1 tblsp garlic cloves, sliced
Ø  100 gms. Ginger, chopped
Ø  ½ kg oil
Ø  1 tblsp salt
Ø  1 tblsp cumin seeds
Ø  2 tblsp coriander seeds, crushed
Ø  2 tblsp chilli pwd

Scrap and cut carrots into 2 inch long thin pieces. Put the carrot pieces in the sun for 8 hours. Now heat the oil. Remove it from the flame and add garlic, ginger and salt. Cool and add cumin, coriander seeds and chilli powder. Stir in carrot pieces and pour into a clean dry jar. Keep it as it is for a week. Then use it.
