Mongolian Rice Pudding














Ø  4 tblsps brown rice
Ø  1 cup water (250 ml)
Ø  2 ½ cups milk or soya milk (626 ml)
Ø  ½ cup sugar (125 gms)
Ø  ½ cup walnuts coarsely chopped (60 gms)
Ø  ¼ cup raisins (40 gms)
Ø  Cinnamon or nutmeg

Put rice and water in a saucepan. Cook until water has been absorbed. Add milk and sugar and cook over low flame until mixture thickens. Add walnuts and raisins.

Serve hot, sprinkled with cinnamon.
