Masala Rice















Ø  400 gms rice
Ø  6 small spring onions without leaves  
Ø  6 small egg-shaped brinjals
Ø  1 cup boiled fresh peas
Ø  6 small potatoes, peeled
Ø  1 cup oil
Ø  1 cup fresh coconut grated (optional)
Ø  2 tsp coriander pwd
Ø  2 tblsp cumin seeds, baked and powdered
Ø  1 tsp sugar
Ø  2 tsp chilli pwd
Ø  1 tsp garam masala
Ø  A handful of coriander leaves
Ø  Salt to taste

Take cumin, coriander, chilli powdered, sugar, salt, garam masala, coconut, etc and put them into a mixer to grind. Now add little water and grind the whole lot into a fine smooth paste. Cut the vegetables into pieces in such a way that the pieces remain joined. Fill in the vegetables this masala paste. Now heat oil or ghee. Add stuffed vegetables, sprinkle a little water and cover cook till they are tender.

Now cook the rice in double the quantity of water. Mix well in the boiled rice, cooked vegetables and peas. Now simmer it in an oven for 5 mts. Serve it hot with curry.
