Ø 1 kg of size round shaped brinjals
Ø 1 medium sized whole pod of garlic, peeled and minced
Ø 3 minced onions
Ø 6 green chillies
Ø 1 cup fresh and thick curd
Ø 2 tblsp oil.
Ø A handful of coriander leaves, chopped
Ø Salt to taste
Roast the brinjals in an oven or fire till the whole pith is soft inside and skin totally charred. Now remove its skin and grind the whole pith to a smooth paste. Mix in the beaten curd and salt. Now heat ghee and fry garlic, onions and green chillies till light brown. Stir the paste well. Cook on medium flame till golden brown. Add lemon juice and serve garnished with fresh coriander leaves.
