Hot Chicken Curry

















Ingredients

  1. 2 tb.sp. corn oil
  2. 1/4 teaspoon fenugreek seeds
  3. 1/4 tsp. onion seeds
  4. 2 medium onions chopped
  5. 1/2 tsp. garlic pulp
  6. 1/2 tsp. ginger pulp
  7. 1 tsp. ground coriander
  8. 1 tsp. chilli powder
  9. 1 tsp. salt
  10. 400 gms. tomatoes
  11. 2 tsp. lemon juice
  12. 350 gms chicken, skinned, boned and cubed
  13. 2 tbl tsp chopped fresh coriander
  14. 3 fresh green chillies chopped
  15. 1/2 red ( bell) pepper, cut into chunks
  16. 1/2 green  ( bell) pepper cut into chunks
  17. fresh coriander springs
In a medium sauce pan heat the oil and fry the fenugreek and onion seeds till they turn a shade darker. Add the chopped onion, garlic and ginger and fry for about five minutes until the onion turn golden brown. Lower the flame.

Meanwhile, in a separate bowl mix together the ground coriander,chilli powder, salt, tomato and lemon juice. Pour this mixture into the sauce pan and turn up the flame to medium. Stir-fry for about three minutes

Add the chicken pieces and stir-fry for five- seven minutes. Add the fresh coriander, green chillies and the sliced (bell) peppers. Lower the flame, cover the sauce pan and let this simmer for about 10 minutes until the chicken is cooked. Serve hot garnished with fresh coriander springs.
