Baigan Stuffed















Ø  500 gms. Of small brinjals
Ø  4 green chillies, well chopped
Ø  6 cloves of garlic
Ø  1 inch long piece of ginger chopped
Ø  2 onions finely minced
Ø  2 tblsp dried coriander seeds
Ø  ½ tsp chilli powder
Ø  ½ tsp aniseeds
Ø  ½ tsp of turmeric powder
Ø  ½ tsp cumin seeds
Ø  6 tblsp oil
Ø  A bunch of coriander leaves

Grind garlic, ginger, coriander seeds, salt and cumin seeds, turmeric , chilli powder and aniseeds into a fine paste. Now slit the brinjals without removing the stalks and fill in the paste. Keep them aside for some time. Heat the onion and green chillies. Put in the stuffed brinjals and shallow fry till they are tender.  Keep them covered and keep turning the brinjals all round.

Now take them off the flame. Serve garnished with green finely minced coriander leaves.
