Karrah Pehlwana (Halvah Titan!)




Ingredients

Carrots – grated or near –puree
2 pounds
Sugar
4 ounces ( ½ cup)
Nutmeg
1/8 tsp
Water
5 tbsp (scant 1/3 cup)
Ground saffron
¼ tsp
Butter – melted
2 ounces ( ½ cube)
Blanched almonds  - freshly ground or very finely chopped
1 pound


Make a syrup with sugar and water. Boil to 217 deg. F, thread stage. Add the carrots, nutmeg, and saffron. Cook until moisture and syrup dries up. Add butter and almonds.
