Indian Pudding - 1















Ingredients

Yellow cornmeal

Preheat oven to 300º. In large saucepan mix together molasses, brown sugar, eggs, salt, baking soda, and 3 cups of milk.

Bring to a boil and add cornmeal slowly, stirring constantly. When fully mixed and thick, stir in butter, then the remaining 2 cups of milk until blended. Pour into a well-oiled 2 ½ -quart casserole set in a larger pan water and bake, uncovered, 1 hour.

Reduce heat to 275F and bake 4-6 more hours, until crusty brown, adding water as necessary to larger pan to maintain level.

NOTES:        Serve warm, with a scoop of vanilla ice cream on top
