Indian Lentil Soup
















Ingredients

Garlic cloves

Olive oil

Water
5 cups
Red lentils
1 cup
Chopped onions
1 cup
Thinly sliced celery
½ cup
Diced carrots
1 cup
Tomato paste
1 ½ tbsp
Bay leaf
1
Chilli powder
1/8 tsp
Salt
1 tbsp
Chopped parsley
½ cup


Put first 7 ingredients in pot. Bring to a boil then add next 4 ingredients and continue simmering till lentils are soft, approx. 2 hrs. Just before serving, add the chopped parsley.
