Sauce semetane (600ml)(10 -15 portions)



Ingredients

Demiglace
600ml
Game liquor
600ml
Juice of 2 lemons

Sour cream
300ml
Butter
60gms
Seasoning



Reduce the game liquor to a glaze. Add the demiglace and sour cream and bring to a boil. Add cream juice and strain through muslin. Blend in butter gradually. Check for seasoning.

Serve with beef entrees, game and poultry.
