Shallots (chopped)

Onions (chopped)

Butter

Parsley (chopped)
1 tsp
Ham (diced)

Capers (chopped)

Vinegar
75ml
Duxelle
60gms
Seasoning



Melt butter. Add onions and shallots. Saute. Add the vinegar lightly and reduce until almost dry. Add the remaining ingredients. Bring to a boil; and simmer for 5 minutes skimming well.
