Rice pudding (A)

Vanilla essence

Grated nutmeg

Wash the rice; place in a pie dish. Add sugar and milk. Mix well. Add butter, essence and nutmeg. Place on a baking sheet; clean the rim of the pie dish. Bake in a moderate oven until the milk starts simmering. Reduce heat and allow the pudding to cook slowly for about 1 ½ to 2 hours.
