Moss jelly



Ingredients

For 100
China grass
5gms
125gms
Water
450ml
11.25litre
Sugar
115gms
2.8kg
Lime juice
to taste 
12 limes


Wash and soak china grass in cold water, in which it is to be cooked, for at least 3 hours. Dissolve on slow fire. Add sugar. Remove from fire, strain. Add lime juice and colouring. Leave to set. When set, serve with custard sauce.


N. B.    Fruit juice may be added the amount of water reduced or jelly could be served with fruit salad and custard sauce.
