paste:

Clean chicken. Apply ground spices inside and out. Put back
giblets into the chicken. Smear the breast with butter. Place in a roasting
tin. Pour stock around. Roast the chicken in a fairly hot oven, gas mark 6 or
400oF for about 1 hour 15 minutes, or till done. Dish out. Surround
with straw potatoes. Serve gravy in a sauceboat. Serve vegetable pulao, mint
raita, pickle and pappad separately.
