Masala roast chicken















Ingredients

Quantity
Chicken (medium-sized)
1
Butter
30gms (2 tbsp)
Good stock
1 cup

Grind to a fine paste:


Red chillies (without seed)
5
Cloves
6
Cinnamon
½ ‘ piece
Pepper corns
a few
Salt

Garlic
6 cloves


Clean chicken. Apply ground spices inside and out. Put back giblets into the chicken. Smear the breast with butter. Place in a roasting tin. Pour stock around. Roast the chicken in a fairly hot oven, gas mark 6 or 400oF for about 1 hour 15 minutes, or till done. Dish out. Surround with straw potatoes. Serve gravy in a sauceboat. Serve vegetable pulao, mint raita, pickle and pappad separately.
