Liberian cassava cake














Ingredients

Tapioca (raw, grated)

Milk
½ cup
Egg (beaten)

Butter
6 tbsp
Sugar
1 cup
Grated coconut
¾ cup
Refined flour
½ cup
Baking powder
2 ½ tsp
Salt
a pinch
Vanilla
1 tsp


Wash, peel and grate the tapioca and soak in milk for 5 minutes. Cream butter and sugar; add beaten egg, grated coconut and tapioca mixture. Sift flour with baking powder and add to the batter. Add a few drops of vanilla essence. Pour the mixture into a greased and floured cake tin. Bake at 200oC (about 400oF) for 40 minutes.
