Indian dressing (150ml) (5 - 8 portions)



Ingredients

Salad oil
6 tbsp (100ml)
Vinegar
4 tbsp (60ml)
Pepper
½ tsp
Mustard
1 tsp
Paprika
a pinch
Sugar
½  tsp
Eggs (hard-boiled)
3
Green pepper
60gms
Pickled beetroot
15gms
Parsley
a few springs (1 tsp chopped)


Mix together dry spices and sugar. Add vinegar and salad oil and blend well by shaking in a bottle. Blend in sieved yolks of hard-boiled eggs. Add finely chopped green pepper, chopped pickled beetroot and chopped parsley. Mix well and chill before serving. Excellent with hard-boiled eggs.

Serve with hard-boiled eggs and salads.
