Prepare a custard with the yolk of eggs, sugar and milk. Add gelatine dissolved in warm water. Allow to cool and add the flavouring. Beat egg whites very stiffly and fold into the custard. Keep bowl over ice or in cold water and stir occasionally. When on the point of setting pour into a wet mould and leave to set in the refrigerator.
